Devadeva Mirel, Alachua, USA: On My Shelf : Two New Cookbooks!

My cookbook collection is weak. I have a few go-to books, including Kurma’s standards, Yamuna Devi’s tome to the Indian culinary sub-continent, Miriam Kasin Hospodar’s cult classic Heaven’s Gate and Better Homes & Gardens New Cookbook, so well worn in paperback that it is in multiple pieces. But that does not mean I am without interest in expanding my collection.

Books that interest me generally span the genres of vegan baking, the science behind the magic, Middle Eastern flava’ and, of course, the most recent edition of Better Homes & Gardens New Cookbook. Mine is 10 years old. And, as I mentioned, in multiple pieces.

For the holidays, my aunt gave me a bookstore gift card. Thank you Aunt Sheila! Emails I sent you bounced back, btw. I decided upon two cookbooks and they arrived recently. Want to know what I got?

The first one, Nonna’s Italian Kitchen by Bryanna Clark Grogan (the seitan turkey lady), I came across when I was cooking for The Client. I look forward to trying her gnocchi recipe because it’s vegan and I won’t have to figure stuff out or make modifications. Yippee!

This cookbook cover is so vegan. And Canadian. All mixed up into one.

The second was recommended to me by a Facebook friend and it is very heavily eggy, so although not the least bit surprised, I still manage to be kind of bummed about that. The America’s Test Kitchen Family Baking Book is supposed to be good, however, since all the recipes have been….tested. Ummm, yeah. We’ll see. From the looks of things, it appears as though I am not in urgent need of replacing the Better Homes & Gardens book because I use that one basically for baking recipes.

This cookbook is large–in breadth and in format. And it is full of information! And photographs! And tabs to organize the recipes! Okay. I am a little excited about it, just it will require some thinking in order to get into it and with new baby, I don’t have much think left in me.

TV show? Wait a minute. I didn't know there was a TV show!

Well, la-de-freaking-do! TV show. Just found out there is a website, too. WEBSITE! With recipes. RECIPES! So, don’t be a putz like me and use the gift card from your Aunt Sheila on this book since you can get most of the recipes free. Online. Happy Hanukkah.

ISKCON Brampton, Canada: ISKCON BRAMPTON - SUNDAY SCHOOL


ISKCON Brampton has a wonderful Sunday School for children ages 5 - 15. We provide fun filled strategies to present Vedic Culture to children. Through the medium of music, drama, debates, quizzes and games, children are able to study the ancient wisdom of the Vedas. The syllabus is also designed to simultaneously teach them to always remember Krishna and never forget Him.

Everyone is welcome! Every Sunday from 12pm to 1pm.

Sri Vrindavana Dhama.

In his Vraja-Riti-Cintamani, Visvanatha Cakravarti Thakura informs us on the matter that:

"...some portion of transcendental Vrindavana becomes visible in this world at the time of Lord Krishna's manifest pastimes.
Conditioned souls think Vrindavana is material, although actually it is spiritual and beyond their ability to understand or describe it."

Here's the darsana of that Divine Land that we all aspire to attain.

Let us pray for the spiritual vision that will enable us to always reside in Vraja-bhumi.

H.H. Prahladananda Swami: Message from ISKCON Minister for Health and Welfare

In 1967, Srila Prabhupada wrote to a disciple: “Be careful about your health first. This information is not only for you but all my noble sons. I am an old man. I may live or die it does not matter. But you must live for long time to push on this Krishna Consciousness movement.” In modern society, being healthy is uncommon, and the means of keeping or regaining health is often expensive and expressed in complicated ways. Srila Prabhupada, however, recommended cleanliness, regulation, and a pure consciousness. With its four regulative principles prohibiting flesh eating, intoxication, illicit sexual connections, and gambling, a Krishna consciousness lifestyle is quite conducive to staying fit. Additionally, eating food offered to Lord Krishna, or God, and chanting His holy names with love and attention will further prevent all kinds of unwanted deficiencies.

Hi Kurma, Great site. Do you have recipe available for Buckwheat flatbreads? Chapattis? Rotis, please? I can't have gluten. I want to make some for my elderly parents, how long would they store? Can you freeze if necessary? Buckwheat, oil, salt and water? Would that turn out ok?

My reply:

Hello K, I do have a recipe for buckwheat chapatis. They are gluten-free. As far as freezing and storing: Well, fresh is best, but I guess they will last in the fridge if stored properly, and they may freeze.

Here's the recipe. By the way, they are very hard to roll out, having no gluten. Patience and a deft hand is required.

And no, oil is not required in the dough. The secret is mashed potato. Here we go:

Buckwheat Chapatis

Buckwheat is not technically a grain, but it lends itself to breads and pancakes as it behaves like a grain. In India and elsewhere, on the grain-free Vaisnava fasting day of Ekadasi, buckwheat, as well as other pseudo-grains, like chestnut flour and tapioca flour, are used in a variety of versatile ways. If you like the taste of buckwheat, you'll love these tender versions of India's most popular flatbread, the chapati.

Buckwheat contains no gluten, so those of you who can't eat wheat will find this recipe appealing. As far as equipment is concerned, you'll need at least one non-stick frypan, (two or three are better), a rolling pin, a smooth surface for rolling, and some kitchen tongs. Makes 10 large chapatis.

2 cups buckwheat flour, about 250g ½ teaspoon salt 300g peeled potatoes, about 3 medium-sized potatoes, cut into large pieces 3 tablespoons water a good quantity of extra buckwheat flour for dusting and rolling melted butter or ghee (optional, for spreading over the chapatis after they've been cooked)

roll em': Combine the buckwheat flour and salt in a large bowl.

roll em': Boil the potatoes in sufficient water until they are very soft. Remove, drain and mash them. Measure the quantity of mashed potatoes. You will need 1 cup. Place the measured quantity of mashed potatoes in a large metal sieve over a large kitchen bowl. Push and rub the potato through the sieve and collect it in the bowl.

roll em': Pre-heat the large non-stick frying pan, or pans over moderate heat. Combine the warm mashed potato with the buckwheat flour. Add the water a little at a time to form a soft, but not sticky dough. Turn the dough onto a clean, smooth working surface, sprinkled with buckwheat flour. Turn and knead the dough for one or two minutes.

roll em': Pinch off 10 even-sized lumps of dough and form them into smooth balls, pressing and kneading them gently into thick patties. Dredge a patty of dough in flour and place it on the flour-strewn surface. Carefully roll it with a dry, flour-sprinkled rolling pin to a fairly thin, even, smooth disc about 15 cm (6 inches) in diameter. If it sticks to the pin, re-roll it and apply more flour. A little care needs to be taken here since the dough contains no gluten and is very delicate.

roll em': Very carefully pick up the disc of dough and quickly transfer it to the frying pan. Slip it onto the hot pan, taking care to avoid wrinkling it. Cook it for about 1 minute on the first side. The top of the bread should start to show small bubbles, or it may even fully puff up in the pan - even better!

roll em': Turn it over, being careful not to tear it, and cook it on the reverse side. When a few dark spots appear on the underside, lift the chapati with kitchen tongs to about 5cm over a full flame, if you are using gas. If using an electric stove, you'll need to sit a cake cooling rack above, but not touching, the element. The chapati should swell into a puffy balloon.

roll em': Cook it until it shows a few more darker spots, then place it in a bowl or basket covered with a clean cloth, and continue cooking the rest of the chapatis. When they are cooked and stacked, you may like to butter them. Serve buckwheat chapatis hot, or keep them warm, well covered, in a pre-heated warm oven for up to half an hour.

This Wednesday (2nd of Feb) we will have the opportunity to hear Varshana Maharaja speaking. (Health permitting)

Akrura das, Gita Coaching: PREACHING HAPPINESS

I recommend to most devotees that come to me for Gita Coaching to engage in some kind of preaching.

Preaching itself or connection to preaching ensure happiness because Krsna is very much pleased if we preach.

Without this, life is not as good as it can be.

And it is not hard and complicated.

It may be as simple as giving someone an invitation card or making friends with them.

Those who are convinced of or experience the great benefit of preaching, once started, never stop engaging in it.

Preaching is the highest happiness. Therefore, Krsna's best devotees do it.

Preaching transforms our lives and lives of others.

Polka, rap, classic rock, country, folk, blues — name a musical genre, and there is a Steelers song to go with it. So why not some good old-fashioned Punjabi-influenced Bhangra-infused hip-hop?

Uh … come again?

BlackMahal, a San Francisco band, has created possibly the most unique Steelers song to come down the pike, ever, called Black, Gold and Silver — the ‘silver’ is a reference to the Lombardi Trophy (which must come as relief to the small percentage of you worked up about Wiz Khalifa’s use of “Yellow” rather than “Gold”) — and comes up with a interesting new moniker for the team — the thin-jabis.

According to a release from the band:

“”Steelers Nation is a worldwide community so it’s time for the rest of the world, like us, to express our love for the Steelers in local flavors,” says BlackMahal rapper and executive producer Vijay Chattha, a native of Weirton, WV, just 45 minutes from Pittsburgh’s Heinz Field stadium.

“”The new colors of the Pittsburgh Steelers are black, gold and silver,” continues Chattha. “The Lombardi trophy and its silver sheen has become a standard of success in the team’s historic franchise, so we wanted to celebrate our colors on the song.”

“”The song takes the classic black and gold colors of the Pittsburgh Steelers and adds the silver of the storied Lombardi Trophy, given to the winner of NFL Super Bowl. First there was ‘Here We Go” by Roger Wood then “Black and Yellow” from Wiz Khalifa. Now BlackMahal unveils the first bhangra-infused anthem for football fans, “Black, Gold and Silver.”

“”The song features some dedications and samples of the late Steelers broadcaster and icon, Myron Cope as the band re-invents the, “Yoi, Yoi, and Double Yoi” catchphrase.

[The song] also introduces a new name for the team that sits at the confluence of the Monongahela, Alleghany and Ohio Rivers, translating them into ‘thin-jabis’ or “those from the three rivers.”

Part P-Funk, part Punjabi-Funk, BlackMahal is a 10-piece live music experience complete with drums, DJs, horns, hip-hop MCs, and the godfather of Punjabi-American music – Ustad Lal Singh Bhatti.

BlackMahal’s lead vocalist, Lal ‘Blitz-Singh’ Bhatti, is regarded as the godfather of Punjabi-American music. Bhatti has collaborated with the Black Eyed Peas, The Doors and has performed for nearly every U.S. President since Gerald Ford as well has being honored at the opening of the Smithsonian Sikh Gallery in 2005.
